Pistachio Cranberry Muffins Recipe

 

If you are looking for a healthy snack option, look no further than this pistachio cranberry muffins recipe. With only 35 minutes of overall cooking time, you can have these served warm or have them over a number of days. With lots of healthy ingredients that will not get in the way of your health and fitness goals, this recipe is one that you will be coming back for more and more of.

Ingredients

  • ½ cup (70g) dried cranberries
  • 1 egg
  • ¾ cup (185ml) olive oil
  • 1 cup (250ml) buttermilk
  • ½ cup (75g) shelled pistachios, chopped
  • ½  cup (100g) stevia or sugar-free sugar substitute
  • 2 cups (300g) wholemeal self-raising flour
  • 1 ½ tsp ground ginger
  • 1 tsp ground cinnamon
  • ½ tsp ground cardamom

 

Method

  1. Preheat oven to 200°C. Line a 12 x 1/3-cup capacity muffin tin with paper cases.
  2. Place the cranberries in a bowl and cover with boiling water. Soak for 5-10 minutes then drain. Set aside.
  3. In a mixing bowl, whisk together the egg, oil and buttermilk. Stir in the pistachios, stevia and reserved cranberries. Add the flour and spices and stir until combined (do not overmix). Divide evenly among the paper cases. Sprinkle extra pistachios over the muffins.
  4. Bake in preheated oven for about 20 minutes or until a skewer inserted into the centre comes out clean. Leave in the tin for 5 minutes, before transferring to a wire rack to cool.
  5. Serve warm or cool.
