Healthy Breakfast Salad Recipe

 

A healthy salad recipe is not something that is often associated with breakfast, but this option will open your eyes to some new possibilities! With nothing but healthy ingredients, it will ensure that you will start your day on the best possible note. Most breakfasts are carb dominant, which can leave you feeling tired and sluggish for the next few hours. You may find with these cleaner ingredients that you will have a more productive and energetic day ahead.

 

Prep time: 10 mins                             Cooking time: 5 mins                          Serves: 2

 

Ingredients

  • 1 ½ cups chopped cucumbers
  • 1 cup cherry tomatoes, halved
  • 1 red capsicum, diced
  • 1 avocado, diced
  • ¼ cup fresh basil, torn into bite-sized pieces
  • ¼ cup parsley, roughly chopped
  • ¼ cup toasted cashews or pine nuts
  • 1 tablespoon olive oil, use the best you have
  • ¼ teaspoon EACH: salt and pepper
  • 2 large eggs

 

Method

  • Add the cucumber, cherry tomatoes, red capsicum, avocado, basil, parsley, and nuts to a medium-sized mixing bowl. Add the olive oil, sea salt, and pepper and toss to coat.
  • Heat a non-stick frying pan over medium heat. Crack the eggs into the pan and cook for 3-5 minutes, until done to your liking. Divide the salad between two plates and top each with an egg.
