Smashed Avocado with Goats Cheese Feta

A healthy and nutritious breakfast/brunch option

Ingredients:

  • 2 x slices seeded bread (burgen or similar)
  • 1 x avocado
  • 50gm goats cheese feta
  • Perino tomato (sliced)
  • Basil (chopped)

Method:

  • Mash avocado in a bowl with fork and spread over toast
  • Place tomato slices over avocado
  • Crumble goats cheese and sprinkle basil on top

Easy. Simple. Nutritious.

 


 

Herb & Garlic Chicken with Mixed Salad

Great for lunch and/or dinner

Ingredients:

Chicken

  • 250gm chicken thigh
  • Mixed herbs
  • Lemon Juice
  • 2 cloves fresh garlic

Salad

  • Rocket/baby spinach
  • Capsicum (sliced)
  • Cherry tomato (sliced)
  • Red onion (sliced)
  • Avocado (sliced)
  • Pumpkin seeds

Method:

Chicken

  • Mix herbs, garlic and lemon juice in a bowl and marinate chicken
  • Grill/BBQ/pan cook chicken until cooked through

Salad

  • In a bowl mix all ingredients and shake to combine well

Full of flavour and nutrients

 


 

Chili Salmon Salad

A different take on a great meal

Ingredients:

Salmon

  • 200gm salmon fillet
  • Fresh chili (chopped)
  • Fresh ginger (crushed)
  • Fresh garlic (crushed)
  • Tamari/Soy

Salad

  • Rocket/baby spinach
  • Capsicum (sliced)
  • Cherry tomato (sliced)
  • Red onion (sliced)
  • Avocado (sliced)
  • Pumpkin seeds
  • 40gm goats cheese feta

 

Method:

Salmon

  • Combine all ingredients in a bowl and leave to marinate for a few hours
  • Once marinated cook on baking paper in oven at 180 degrees until cooked through
  • Once cooked, pull apart with fork into slices and mix into salad

Salad

  • In a bowl mix all ingredients and shake to combine well
