Frozen Fruit & Granola Bark Recipe

 

This frozen fruit & granola bark recipe is a summer winner! Simple and easy to make, it will cool down and nourish you on these hot summer days. With some healthy ingredients and barely anything too bad for you, it is a great recipe to make you feel like you are eating something a bit naughtier than you really are. The added bonus of this recipe? You can keep it in the freezer for a couple of months (if it lasts that long).

 

Prep time: 15 mins     Cooking time: 4 hours             Serves: 8

 

Ingredients

  • 2 cups plain Greek yoghurt
  • ¼ cup sugar-free sweetener
  • 2 teaspoons vanilla extract
  • Pinch of salt
  • ¾ cup quartered seedless grapes/any berry of your choice
  • ¾ cup granola

 

Method

  1. Line a rimmed baking sheet with baking paper; set aside. (Make sure it fits in your freezer, otherwise line 2 large plates instead.)
  2. Place the yoghurt, sweetener, vanilla, and salt in a medium bowl and whisk to combine.
  3. Pour onto the baking sheet and use a spatula to spread into an even layer about 1-2 cm thick (it will not reach to the edges of the baking sheet). Scatter the grapes/berries and granola evenly over the yogurt.
  4. Freeze uncovered until solid, about 4 hours.
  5. Pick up the bark by and lifting the baking paper up and onto a cutting board.
  6. Cut or break into irregular pieces and serve immediately, or keep frozen in an airtight container or freezer zip-top bag.
