Looking for a healthy lunch idea that’s quick, nutritious, and easy to prepare? When your schedule is packed and you barely have time to sit down, preparing a healthy lunch can feel like a challenge. Whether you’re juggling work, family, or other commitments, it’s easy to fall into the trap of grabbing something quick but not-so-nutritious.
That’s why I’ve put together five delicious, wholesome lunch ideas that are not only quick to prepare but also satisfying and energizing. These recipes will help you stay on track with your nutrition goals, even on your busiest days!
Healthy Lunch Idea #1 – Avocado and egg on toast
Avocados are packed with a variety of nutrients. Primarily made up of monounsaturated fats which are heart-healthy and contribute to reduced inflammation. They are also high in fibre, which promotes good digestion and helps you keep fuller for longer. This along with the addition of vitamins K, E C and B, potassium, magnesium, and antioxidants make it a great lunchtime choice on top of wholemeal toast. The toast will provide carbs, while the addition of eggs will provide you with all the essential amino acids needed to build muscle.
Healthy lunch idea #2 – Protein pancakes
Protein pancakes can be whipped up in no time and serve you a tasty, sweet and filling lunchtime snack. Simply mash a banana with a fork, add 2 eggs and a scoop of protein, and a quarter cup of oats. Spray some oil on a non stick pan and put over medium heat. Pour the required amount in and cook until golden then flip. Top with your favourite toppings – some honey and raspberries is a personal favourite of mine! This protein packed lunch will contribute towards your muscle building goals.
Healthy lunch idea #3 – Mexican rice and tuna bowl
This one really does fit into the ‘quick easy and nutritious’ category. It’s my go to lunch if I’m stuck on time and want something that aligns with my goals. I simply put half a bowl of Mexican rice in the microwave, boil up some pre-divided veggies for extra nutrients and drain a can of tuna in spring water for your protein source. (I always use a big tin = 30g protein). Combine all and add some sriracha to taste. Voila – a nutritious balanced meal that you will have ready in no time.
Healthy lunch idea #4 – Grilled chicken wrap
If you have an air fryer – this one is simple. I recommend buying the pre-marinated chicken in Aldi. It is a mixed herb and lemon seasoning and saves the time seasoning yourself. It is very tasty!
Pop a chicken breast into the air fryer, then after 15-20 minutes the hard part is finished. Throw some light mayo on a wholemeal wrap – fill up with lettuce tomato cucumbers and light cheese. This can then go back into the air-fryer top be toasted if you like. Another example of a quick easy balanced lunch time meal.
Healthy lunch idea #5 – Last nights leftovers
Most people tend to have leftovers of their previous nights dinner for the next days lunch, which is great and much better than wasting food. Ensure however that you are still balancing your plate when doing so with half the plate full of colour for vitamins and minerals, a quarter lean protein such as chicken, fish or mince and starchy carbs such as rice, pasta or potatoes. You may be required to cook up some added veggies, or add some more meat to ensure you are ticking these boxes and the lunch will satisfy you for the day.
