Whereas food that has to travel from one side of the country to the other is often picked up before it is ripe. A study published in the Journal of Agricultural and Food Chemistry found that health promoting anthocyanin pigments increased more than 4 fold as blackberries became ripe. In general, when foods are imported, fruits like tomatoes, bananas and pears are often picked unripe, and are artificially ‘ripened’ with ethylene gas.
