A warm, high‑protein dinner made with baked honey‑garlic salmon, roasted pumpkin and carrot, and fresh spinach. Balanced, flavourful and ideal for a satisfying evening meal.

Ingredients
- 150 g salmon fillet
- 150 g pumpkin, diced
- 1 medium carrot, sliced
- 1 cup baby spinach
- 1 tbsp honey
- 1 tsp soy sauce
- 1 tsp minced garlic
- Salt and pepper
- Optional: sesame seeds, chilli flakes, lemon squeeze
Method
- Preheat oven to 200°C.
- Toss pumpkin and carrot with salt and pepper, then roast for 20–25 minutes.
- Mix honey, soy sauce and garlic in a small bowl.
- Place salmon on a lined tray and brush with the honey‑garlic mix.
- Bake salmon for 12–15 minutes until cooked through.
- Add spinach to a bowl, top with roasted vegetables and salmon.
- Finish with optional sesame seeds, chilli flakes or lemon.
Notes
- Swap salmon for chicken breast if preferred.
- Add microwave rice for a higher‑carb dinner.
- Works well as a meal‑prep option for 2–3 days.
